Cabot® Chipotle Cheddar Cheese Cornbread

½ C Butter
2/3 C white sugar
2 eggs
1 C buttermilk
½ t baking soda
1 C cornmeal
1 C all purpose flour
½ t salt
½ C ®Cabot Chipotle Cheddar Cheese
2 scallions, chopped

Preheat oven to °375. Grease an 8 inch square pan. Melt butter in a large skillet. Remove from heat and add the sugar. Add the eggs quickly and beat well. Combine the buttermilk with the baking soda and stir into egg mixture. Stir in cornmeal, flour and salt until all lumps are removed. Pour batter into prepared pan and bake for 30 -40 minutes or until a toothpick inserted comes out clean.
